- 1 pound cooked chicken, shredded
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese
- 6 tortillas, cut into strips
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, rice, black beans, corn, taco seasoning, and salsa.
- Layer half of the tortilla strips on the bottom of a greased baking dish.
- Spread half of the chicken mixture over the tortillas, followed by half of the cheese.
- Repeat the layers, ending with cheese on top.
- Bake in the preheated oven for 25-30 minutes until heated through and cheese is bubbly.
