Chicken Burrito Casserole

A delicious and easy recipe for a Chicken Burrito Casserole that’s perfect for busy weeknights.

Ingredients

  • 1 pound cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese
  • 6 tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, rice, black beans, corn, taco seasoning, and salsa.
  3. Layer half of the tortilla strips on the bottom of a greased baking dish.
  4. Spread half of the chicken mixture over the tortillas, followed by half of the cheese.
  5. Repeat the layers, ending with cheese on top.
  6. Bake in the preheated oven for 25-30 minutes until heated through and cheese is bubbly.

  • This casserole can be made ahead of time and stored in the fridge before baking.
