- 2 pounds potatoes, diced
- 1 pound smoked sausage, sliced
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon olive oil
- salt to taste
- pepper to taste
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix the diced potatoes and sliced sausage.
- Drizzle with olive oil, then add the ranch seasoning, salt, and pepper. Toss to combine.
- Spread the mixture onto a baking sheet and bake for 25-30 minutes, or until potatoes are tender.
- Remove from the oven and stir in the sour cream and half of the cheddar cheese.
