  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine grated carrots, sugars, and oil. Mix well.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter into a greased springform pan.
  7. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let it cool completely.
  9. For the cheesecake layer, beat the cream cheese with powdered sugar and vanilla until smooth.
  10. Spread the cheesecake mixture over the cooled carrot cake.
  11. Refrigerate for at least 4 hours before serving.
