1 cup granulated sugar
1 cup all-purpose flour
1 cup cream cheese, softened
3 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon ground cinnamon

1/2 cup chopped walnuts (optional)
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix grated carrots with sugar, oil, and eggs until well combined.
In another bowl, whisk together flour, baking soda, cinnamon, and salt.
Gradually add dry ingredients to the carrot mixture and stir until just combined.
Fold in cream cheese until smooth and mix in walnuts if using.
Pour the batter into a greased springform pan.
