Caramelised Soy Chicken in Garlic Ginger Broth with Rice: An Incredible Comfort Meal

Ingredients

  • 4 pieces chicken thighs
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 4 cups chicken broth
  • 1 cup jasmine rice
  • 2 cups water
  • 2 green onions, chopped

Instructions

  1. Marinate chicken with soy sauce and brown sugar for at least 30 minutes.
  2. In a large pot, heat vegetable oil over medium heat.
  3. Add minced garlic and ginger, sautéing until fragrant.
  4. Add marinated chicken and sear until caramelised.
  5. Add chicken broth and bring to a boil.
  6. Stir in rice and water, then reduce heat and simmer until rice is cooked.
  7. Serve hot, garnished with chopped green onions.
