Bourbon Strawberry Angel Food Cupcakes

  • 1 cup strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 cup egg whites (about 8 large eggs)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup bourbon
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, lightly whisk egg whites until foamy, then add cream of tartar and salt; continue whipping until soft peaks form.
  3. Sift together flour and sugar, then gradually fold into egg whites with a spatula.
  4. Stir in the vanilla extract and bourbon.
  5. Gently fold in the strawberries.
  6. Pour the mixture into an ungreased angel food cake pan and bake for about 25 minutes.
  7. Let cool upside down for 1 hour before removing from pan.
