Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
  3. Add the butter, egg, and vanilla extract and mix until smooth.
  4. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until set.
  6. Let the cookies cool completely.
  7. Whip the heavy cream until peaks form.
  8. Once cool, spread whipped cream on half of the cookies, then top with another cookie, creating a sandwich.
  9. Drizzle with chocolate ganache before serving.

Notes

  • For added flavor, consider adding a pinch of espresso powder to the cookie dough.
