Boston Cream Pie Cookies are a delightful fusion of cookie and cake, offering the rich flavors of the classic dessert in a bite-sized treat.

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg and vanilla, mixing until incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. For the filling, whip the heavy cream and powdered sugar until soft peaks form.
  9. Once cookies are completely cool, fill half with whipped cream and top with another cookie.
  10. Melt the chocolate chips and drizzle over the filled cookies before serving.

Notes

  • For a different flavor, try adding orange zest to the cookie dough.
