  • 3 pounds chuck roast
  • 2 cups beef broth
  • 5 dried guajillo chiles
  • 3 dried pasilla chiles
  • 2 cloves garlic
  • 1 onion
  • 1 tablespoon cumin
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • 12 corn tortillas
  • 2 cups chopped onion for topping
  • 2 cups chopped cilantro for topping
  • 1 lime, cut into wedges

Instructions

  1. In a pot, combine beef broth, dried chiles, garlic, onion, cumin, oregano, and bay leaves. Bring to a boil.
  2. Add the chuck roast to the pot, cover, and simmer for about 2-3 hours, until the meat is tender.
  3. Once cooked, shred the meat and set aside.
  4. In a skillet, heat the corn tortillas until soft, then fill them with shredded meat and top with onions and cilantro.
  5. Serve with lime wedges on the side.

Notes

  • For added flavor, sear the meat before adding to the pot.
  • Keep tortillas warm in a towel to prevent them from breaking.
