- 3 pounds chuck roast
- 2 cups beef broth
- 5 dried guajillo chiles
- 3 dried pasilla chiles
- 2 cloves garlic
- 1 onion
- 1 tablespoon cumin
- 1 tablespoon dried oregano
- 2 bay leaves
- 12 corn tortillas
- 2 cups chopped onion for topping
- 2 cups chopped cilantro for topping
- 1 lime, cut into wedges
- In a pot, combine beef broth, dried chiles, garlic, onion, cumin, oregano, and bay leaves. Bring to a boil.
- Add the chuck roast to the pot, cover, and simmer for about 2-3 hours, until the meat is tender.
- Once cooked, shred the meat and set aside.
- In a skillet, heat the corn tortillas until soft, then fill them with shredded meat and top with onions and cilantro.
- Serve with lime wedges on the side.
Notes
- For added flavor, sear the meat before adding to the pot.
- Keep tortillas warm in a towel to prevent them from breaking.
