1 pound orzo pasta
2 tablespoons olive oil
1 pound chicken breast, diced
1 teaspoon Cajun seasoning
4 cups chicken broth
1 cup heavy cream
1 cup parmesan cheese, grated
1 cup bell peppers, diced
1/2 cup onion, chopped
2 cloves garlic, minced
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat.
Add the diced chicken and Cajun seasoning, cooking until the chicken is browned.
Stir in the onion, garlic, and bell peppers, cooking until soft.
Add the orzo pasta, chicken broth, and heavy cream, bringing to a boil.
Reduce heat and simmer until the orzo is tender.
Stir in the parmesan cheese, and season with salt and pepper.
Serve hot.
Notes
For added spice, use a spicier Cajun seasoning.
