  • 1 pound boneless chicken thighs
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and bell pepper, sautéing until softened.
  2. Add minced garlic and cook for an additional minute.
