  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the lasagna noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the ground turkey and turkey bacon, cooking until browned.
  3. Add the onion, garlic, and bell pepper, sautéing until softened.
  4. Stir in the crushed tomatoes, chicken broth, Italian seasoning, salt, and black pepper. Bring to a simmer.
  5. Add the cooked noodles to the soup and mix well.
  6. Remove from heat and stir in the ricotta cheese until combined.
  7. Serve hot, topped with mozzarella cheese and fresh basil.
