  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey and turkey bacon over medium heat until browned.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes, chicken broth, lasagna noodles, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  5. Stir in ricotta cheese and cook until heated through.
  6. Serve topped with mozzarella, Parmesan, and basil.

Notes

  • For a vegetarian version, substitute turkey bacon with mushrooms.
  • Can be made ahead and reheated.
