Autumn Tortellini Soup with Sausage

  • 1 pound Italian sausage
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups fresh spinach
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook until browned.
  2. Add onions and garlic, cooking until the onions are translucent.
  3. Pour in chicken broth and diced tomatoes; bring to a boil.
  4. Add spinach and tortellini, cooking until tortellini is tender.
  5. Season with basil, salt, and pepper before serving.
