30-Minute Seared Salmon with Lemon Orzo

A delicious and quick dinner recipe featuring seared salmon served on a bed of lemon-infused orzo.

  • 4 fillets salmon
  • 1 cup orzo
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 2 cups vegetable broth
  • 1/4 cup fresh parsley (chopped)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season salmon fillets with salt and black pepper.
  3. Cook salmon for about 4-5 minutes on each side or until cooked through.
  4. In a separate pot, bring vegetable broth to a boil.
  5. Add orzo to the boiling broth and cook according to package instructions.
  6. Once orzo is cooked, drain and return to the pot.
  7. Add garlic, lemon zest, lemon juice, and parsley to the orzo. Stir to combine.
  8. Serve salmon over the lemon orzo.
